Candidates are given a specific menu accompanied by fine wines, along with a detailed guest list. They must then set the table and create a seating plan in function with the information received.
In small groups, and after meeting with their examiner, students must realize a table configuration.
They decide together on the most appropriate arrangement, taking into consideration the placement of guests, the choice of cutlery, furniture (e. g. wheelchair space) or any special details that need to be taken into account.
Once the plan has been agreed upon by the group, they have a limited amount of time to finish the set up.
Each candidate, wearing white gloves, conscientiously carries out a specific role in order to successfully finish the table set up. They work together in order to ensure that every detail is perfect before the examiners make their final decision.
The examiners give a final grade at the end of the set up. They also share valuable feedback from their own experience in order to help the students in their future careers.
The exercise of setting up a table with a specific seating plan requires constant concentration and absolute rigor.
